Holiday Cheer
When Blakesville’s cheesemaker Veronica Pedrazza pitched this cheese to me, she was like “here, ya want this?” and obviously I said yes. Pecuri In I Vigne, which translates from Italian to “sheep in the vineyard”, is made by wrapping dollops of fresh sheep milk cheese in wine soaked grape leaves, cryo-vaccing the whole thing, and letting it marinate in its own stuff. The sheep milk is yogurty and the cheese ends up lightly sweet from the wine.
