Ovelha Amanteigado
Sweet, fruity, kind of sour, with a custardy yet bouncy (almost gelatinous?) texture, Ovelha Amanteigado is now part of the catalog and I couldn't be more excited. Made with raw sheep milk and thistle rennet by Queijos Tavares in Portugal. This style, called tortas, is one of my favorites even since I was introduced to them 10 years ago.
